Subida is not your everyday white wine. It's actually quite similar to other fermented drinks such as kombucha and sour beers which makes it not only interesting but also healthy for you as it's essentially a probiotic. In fact, this wine is similar to what one might expect if they traveled back in time to ancient Rome as it's made in a very traditional, ancient style.


Tasting Notes
The wine is a distinct golden amber hue when poured into the glass. This is a highly perfumed wine with aromas of soft ripe apricot and peach mingling with notes of nutmeg and cinnamon. The scents of golden raisin and honeysuckle follow. On the palate, the stone fruit continues and broadens to include bright plum flavors and the subtle bitterness of black plum skin. The acidity is pronounced leaving a pleasantly clean aftertaste. Unfined and unfiltered, and with the absence of any added sulfites, this wine was oxidized to stability and shows a full spectrum of both aromas and flavors. Natural wine at its finest, there is nothing in this bottle that did not come directly from the vineyard.


Food Pairing Notes
Of all the wines we make, this wine instantly changes with food. Whereas most wines cleanse or compliment, Subida becomes part of the meal. It is not meant to be a cocktail or sipping wine. It pairs very well with Thai dishes and curries, shellfish, hearty seafood, cured meats and many others.
