Tasting Notes
A blend of Dolcetto and Barbera from the Walker Vineyard, this Rosato exhibits a vibrant coral pink color and sparkles in the sunlight. The nose has a delightful floral quality with a hint of spice hiding under the flowers. Rose petals and citrus blossoms mingle with cardamom and mace.
On the palate, blood orange and ruby grapefruit are enhanced by a base of raspberry and wild strawberry. The finish is clean and drying with a beautiful lingering acidity.
Production Notes
Tumbled in a closed press to allow the grapes to be burst by their own weight. Cold soaked and tumbled lightly for 1 hour. Lightly pressed. Barrel fermented with naturally occurring yeast. Aged for 8 months before being bottled by hand.
Food Pairing Notes
This wine is a natural with any shellfish preparation. It shines with an al fresco lunch of fresh greens, charcuterie and cheese. Light, fried, tempura style appetizers work amazingly with this fresh, clean rosato as well.
