Spaghettini with Vodka and Caviar
An elegant
and easy dish – pairs beautifully with Palmina Sauvignon and
is a great addition to your Feast of the Seven Fishes meal!
Ingredients
4 tbsp olive oil
3 scallions, thinly sliced
1 clove garlic, finely chopped
½ cup vodka
2/3 cup heavy cream
½ cup black or red caviar
salt and freshly ground black pepper
1 lb spaghettini
Serves 4
Heat the oil in a small frying
pan. Add the scallions and garlic, and cook gently for 4-5 minutes.
Add the vodka and cream, and cook over low heat for about 5-8 minutes
more. Remove from heat and add the caviar. Season with salt and
pepper as necessary
Meanwhile, cook the spaghettini
in a large pot of rapidly boiling water until al dente. Drain the
pasta and toss immediately with the vodka and caviar sauce.
